Prepare the Catfish:
Pat the catfish fillets dry with paper towels and season with salt and black pepper on both sides.
Cook the Catfish:
In a large skillet, heat the olive oil over medium-high heat.
Add the catfish fillets to the skillet and cook for about 3-4 minutes per side, or until the fish is golden brown and flakes easily with a fork. Remove the catfish from the skillet and set aside.
