These Baked Zucchini Spears are so flavorful and fun!

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
In a medium bowl, combine the grated Parmesan cheese, bread crumbs, garlic powder, dried oregano, salt, and pepper.
Toss the zucchini spears with olive oil until they are evenly coated.
Roll each zucchini spear in the Parmesan cheese mixture, pressing lightly to adhere the coating.
Arrange the coated zucchini spears in a single layer on the prepared baking sheet.
Bake in the preheated oven for 20-25 minutes, or until the zucchini is tender and the coating is golden brown and crispy.
Garnish with fresh parsley if desired and serve hot.
