Mediterranean Chicken Burgers

1. Prepare the Tzatziki Sauce: In a small bowl, combine the Greek yogurt, grated cucumber, minced garlic, fresh dill, lemon juice, salt, and pepper. Mix well and refrigerate until ready to use.
2. Make the Chicken Patties: In a large bowl, combine the ground chicken, red onion, parsley, minced garlic, crumbled feta cheese, panko breadcrumbs, olive oil, dried oregano, ground cumin, ground coriander, salt, and black pepper. Mix until all ingredients are evenly incorporated.
3. Shape and Cook the Patties: Divide the mixture into 4 equal portions and shape them into patties. Heat a large skillet or grill pan over medium-high heat. Cook the patties for about 5-6 minutes on each side, or until fully cooked through and golden brown.
4. Assemble the Burgers: Spread a generous amount of tzatziki sauce on the bottom half of each toasted burger bun. Place a chicken patty on top, followed by sliced tomatoes, red onions, and spinach or lettuce leaves. Top with the other half of the bun.
5. Serve: Serve the Mediterranean chicken burgers with extra tzatziki sauce on the side if desired. Enjoy!
