Crispy Corn Fritters

1. In a large bowl, combine the beaten eggs, salt, and pepper.
2. Gradually add the flour and baking powder to the egg mixture, stirring until smooth.
3. Fold in the drained corn and shredded cheese until well mixed.
4. Heat the butter and oil in a frying pan over medium heat.
5. Drop spoonfuls of the corn mixture into the hot pan, flattening them slightly with the back of the spoon.
6. Cook each fritter for about 2-3 minutes per side, or until golden brown.
7. Transfer the fritters to a plate lined with paper towels to drain excess oil.
8. Garnish with chopped parsley and serve warm. Enjoy your crispy corn fritters!
