Cauliflower with Gratin

1. Cook the cauliflower bouquets in salted boiling water for about 5 minutes. Drain them and arrange them in a gratin dish.
2. Preheat the oven to 180°C (thermostat 6).
3. In a saucepan, melt the butter, then add the flour and stir to form a rug.
4. Pour the cool cream while continuing to stir until thickened.
5. Add half grated cheese, salt and pepper. Stir until cheese is melted.
6. Pour the sauce over the cauliflower in the gratin dish.
7. Sprinkle the remaining grated cheese and possibly drizzle on top.
8. Bake for about 20 to 25 minutes, or until gratin is golden brown and bubbly.
9. Serve warm with a side of meat or as a main course with a green salad.
