Buttery Whipped Shortbread Cookies

Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
In a large mixing bowl, beat the softened butter until creamy and smooth.
Gradually add the powdered sugar and continue to beat until light and fluffy.
Stir in the vanilla extract.
In a separate bowl, whisk together the all-purpose flour, cornstarch, and salt.
Gradually add the dry ingredients to the butter mixture, mixing until well combined and the dough is light and fluffy.
Drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart. Use a fork to gently flatten each cookie and create a decorative pattern.
If desired, sprinkle with colored sugar or sprinkles for decoration.
Bake in the preheated oven for 15-20 minutes, or until the edges are lightly golden.
Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
