In a large pot, bring water to a boil and add the chopped potatoes. Cook until tender, about 15-20 minutes. Drain and return to the pot.
Add the milk, butter, shredded cheddar cheese, and sour cream to the potatoes. Mash until smooth and creamy. Season with salt and pepper to taste. Keep warm.
In a skillet over medium heat, cook the sausages until browned and cooked through, about 10-12 minutes. Remove from the skillet and set aside.
In the same skillet, melt the butter over medium heat. Add the sliced onions and cook until golden and caramelized, about 15-20 minutes.
Sprinkle the flour over the onions and cook for another 2 minutes, stirring constantly.
Gradually add the beef broth, stirring to combine. Add the Worcestershire sauce and season with salt and pepper. Simmer until the gravy thickens, about 5-7 minutes.
Serve the sausages over the cheesy mash, topped with the onion gravy and garnished with freshly chopped chives.
